Cookery sessions build on already acquired skills and students cook a variety of savoury and sweet dishes.  The lunchtime meal is prepared by the students twice a week: they learn about healthy eating and portion control. The reputation of the quality of the cakes, flans and sauces produced has achieved much recognition from the public who readily purchase these items.  The students even make special celebration cakes to order however difficult the request.

“We always do lots of different things, special things for special days like Valentines Day, Comic Relief.”

A Hospitality course was commenced in 2008 giving the students an opportunity to train in serving and to obtain the CIEH Certificate in Food Hygiene. Opportunities for them to practise their skills are given on a regular basis when catering is required at the Delarue Hall.
